I recently received 4 butternut squashes form a friend. At first, I wasn't sure what to do but eventually decided to make soup. So I used 2 of them to make soup.
haha ,I didn't have any garlic and misread the recipe as 6 garlic instead of 6 cloves of garlic. So I went to the store and bought 6 whole garlic! I read the recipe again and read it correctly this time around. So now I have a ton of garlic.
Anyways, I made the soup and I tasted good! It was the first time I made soup like that and I was a little proud of myself for doing something new. After the soup I decided to roast the rest of the butternut squash. Basically I cut it up into 1 inch pieces and mixed it with garlic, oil, salt, and pepper. Then lay them out onto a baking sheet and bake at 350 F for 30 or something minutes. It was super easy and tasty. 10/10 would do again and recommend.

      butternut squash also goes very well with sweet potatoes (if you have any) either fried or baked in a casserole
