Fullmetal Alchemist Brotherhood, Tower of God, Black Clover(start is pretty bad though), Ascendence of a Bookworm, Food Wars, Death Parade, Sword Art Online(first half of the first season is good and also Alicization), Log Horizon, and World Trigger

Basically, this is all I can think of. Not all is phenomenal, but all has a reason for being big. I have watched a lot of anime, but I'm pretty mainstream. Bolded ones are... favorites? obsessions at one point in my life? idk. Some here are lowkey classics in the anime considering they're over a decade old

 

Twelve Kingdoms (great character development, from a timid high school girl struggling in an ancient world, to an awe-inspiring battle empress)

Baka to Test (best for the laughs xD)

This list is legit
I would add Banana Fish, Jojo, Shokugeki, Black Butler, Classroom Assassination, Black Clover, Gakuen Babysitters (it's so fluffy), Dungeon Meshi (this is manga tho), perhaps something older like Conan and Inuyasha, and definitely all Ghibli's.

 

Haikyuu!! It's a sports anime, I recommend you to watch it
