    - What will happen when you upload a copyrighted content/music/gameplay on YouTube?

    Just asking out of curiosity.

Just credit who owns the content and you will be technically be safe.
Why did I say technically? There are others who copyright strike YouTube channels just for the money or spite. This is why YouTube had to change its regulations concerning the copyright strike system. Check with the news about YouTube's changes. It will definitely help you if you want to post content. You can also learn other tricks in tricking the YouTube algorithm.

In a nutshell, it's a hit or miss when you upload a video using someone'e else content.

Here is a fine example of how the excellent Youtube system works (or maybe does not).

that depends. As long as it falls in to fair use then its technically safe. Game reviews and covers of popular songs tend to fall under fair use even if they use copyrighted material

Most likely you'll go unnoticed, unless you gather enough views. Some owners of music or whatever don't care who uses their stuff unless you claim it as yours, others are being bitches about it.
