Most of the time, what they research is applicable in several fields of contexts both positive and negative, and they really have little idea which ones will end up happening first and or more. The usual case is research is done to find things to better understand so related things can be better applied. It's not as bad as the smut and innuendo makes you think it is, they're not going to feed you ground cockroaches, just copy a material process that happens to be used by a cockroach into other animals like cows and goats. You'll still be drinking cow or goat milk, just more nutritious. No cockroaches involved at all.

Put aside the memes and societal norms, considering how the actual nutrition it would bring, I won't mind tho... if it does properly bred within clean and calculated environment. And cheap. Mostly if it's cheaper than the usual nutrition milk. Because it's cheap. Hopefully it'll become cheaper in the future. Heck, here in SEA, insects are already a staple in some of its region, ranged from normal ones like crickets to creepy critters like spiders (even Tarantulas) to centipedes. So why not?
