So the 'thumbnail' (I have no idea how to call it sorry) of DE shows Ji Ning as an adult but in the novel he's still described as a youth (I read up to the 15th book). Will he ever look like in the 'thumbnail'?
Oh yes he will, in fact you'll be even confused about his age than his looks trust me but its a good book.
Spoiler: Is it? doesn't he stop ageing after reaching xiantian realm? I think they keep their appearance of what they had at the time.
Their aging is proportionate to their new lifespan so he would still be aging but it’d be half as fast as it was. The next great realm after, it basically comes to a halt. If I remember correctly, he became an immortal at 60 so he never really had the chance to properly age. That being said, he’s a fiendgod so he has complete control over his body
Ji Ning looks like he's a young adult the entire time, there's only really 4 major discernable age stages, child, young adult (16- mid/late 30), old adult (40-60), and elder. Esp for asians who age really gracefully until at some point they just explode in wrinkles.

I have finished it, when you get to around 23 to 30 he starts getting older by centuries then he can enter seclusions for a long time
