Reaper of the Martial World. An English Original Cultivation Novel, which... mostly does what you say you want, and I suspect is exactly what you actually want. MC does not get underestimated by his opponents, so long as they actually know enough about him. The thing is, as the story progresses, more people that the MC is preparing to fight, and who want to fight the MC, know less and less about the MC. Not because the MC is in hiding, but because the MC's laying low until he builds up a reasonable level of personal strength, and the way in which others know about the MC is relatively indirect. Roughly spoiler free details below (minor spoilers, but nothing overt). The Story starts relatively normally, MC comes from Earth (a backwater of backwaters, where the people don't even learn to cultivate because most of them can't), and joins the Cultivation World through an ancient contract with Cultivators. MC gets looked down upon, finds a way to hold his own, progresses, and defeats "his betters". As the story progresses, these opponents don't just send the people the MC directly offended, nor people "at the MC's rank" against him. No, they send groups or people a rank or more against him. They treat him seriously, and the story continues along with that. When the MC reaches a point of "dominating all" (it is a cultivation novel, after all), and makes actions that in many stories would be him "insulting his betters", he doesn't actually do it directly. Not because he wouldn't, but because he did it by surpassing them on a leaderboard everyone pays attention to and nobody knows who the MC is. Because he came from a backwater of backwaters. Pretty much everyone is preparing and organizing and guessing at how powerful and skilled and dangerous the MC's potential is, some are worried about their inability to assassinate him because they don't know where or who he is, and the MC is off quietly changing reality as they know it.
