Is there any way I can filter my reading lists based on their official language? And Is there any way to make my reading list show updated novels and have the novel thumbnail to find it easier?

You can make multiple reading lists and put novels of each language in a different reading list.

You can use Series Finder to find each language on your lists - for example, Chinese: https://www.novelupdates.com/series-finder/?sf=1&org=495&hd=-1&mRLi=include&sort=sdate&order=desc

    ~Edit~
As for the covers, there's no option like that, but there is a greasmonkey script that will pop up a cover when you hover your cursor over a link to the novels page.

That's the release feed, not the reading list.
