Watched the latest episode, the protagonist was essentially a female before, but he (or now a She) completely turned into a girl in this episode, voice and all. I don't have any problems with female protagonists. But, I failed to comprehend the reason behind introducing the protagonist as a male in the first place. Especially when the novel itself has a harem tag. There's a lot of good stories with female protagonists, why not do that from the start?
I haven't yet watched the episode but you don't have to worry about the MC turning female. I'm guessing the scene you're talking about is where the episode ended. Wait until next episode and you'll understand why the scene was like that (or go read the novel if you're curious about it, the web novel works as well for this part of the story).

The protagonist (Satoru) was a male first of all. Then he became sexless when he turned into a slime. Just because he shapeshifted into Shizu doesn't mean he turned into a woman. He's still a sexless slime in his core. The reason for the voice change is it's actually not Rimuru but the Great Sage (his skill) possessing his body (Which now turned into Raphael, a sentient consciousness).
In the web novel, he likes wearing maid and cheerleaders outfits. He's either a female or some kind of male who likes wearing maid uniforms and cheerleading dresses.
I don't read the wn but the anime is based off light novel which i heard is a lot different than wn....

Rimuru can choose whatsoever gender but since Rimuru was originally a man his state of mindset is that of a man but eventually discarding some of his common sense of his former human self.
