Birthday 12/23 played cut the rope green monster game as a kid. finds it cute. miffy rabbit, Goose and owns cats. likes art, drawing and animation is really interesting to her. she likes ghibli animations, especially totoro and another animation about a pig pilot. suggestions for gifts are really helpful too! (not sure if pushies are a good idea at this point because I've gifted her a total of 3, 2 big and one smallish)
Between the ones you chose, I personally would like pink. She has a cat right? If you wanna choose something cat themed, maybe get her something that would remind or match with it. You could also just get her an On Nom charm or plushie, if she doesn’t already have one. Any merchandise of something she currently likes right now, Totoro charms, porco rosso plushes, etc., I think she’d like. Or maybe anything previously brought up on a date, she’d definitely feel touched you remembered.
I don't think the color of the cat charm matters as much as you thinking of giving her one. That said, green is probably the most neutral color you could give. Pink and blue have too many gendered associations. Also gifts aren't as important as spending time and making memories. So if you give her the cat charm, make sure you do it as a momento of a fun date or special moment. Otherwise it's just a random token. Handmade gifts also have a good association, since you put personal effort into it while thinking of them. Food is good in this respect. Cookies, a nice dinner, a small cake... whatever. But jewelry or plushies are good too. Since she has cats, making cat toys out of bits of fabric or even buying them implies you care about her fur family. Since her birthday is so close to Christmas, whatever you do, DO NOT GET HER X-MAS STUFF FOR HER BIRTHDAY! It's bad enough being born in that month much less it being so close to the actual day.
Just look at the color of her items. What's her car color? what color of clothing does she normally wear? What's color is her plushie? When in doubt, pink is a safe bet.
For some reason women of this generation don't want pink I can't say all of them, but I have bought pink stuff for GF before and have gotten not so good feedback I avoid pink green is a popular color for women, but it depends on the shade of green blue is the safe bet. When I was a kids/teen Pink was the go to color for most girls, but as one grows up they change in taste just like boys like blue green and black colors they later learn to like more taste that just liking one or 2 colors.

I find that when trying to find a color someone may like looking at their room aesthetics helps. If there are more objects in a particular color than others, that’ll most likely be their preferred color.
Pink looks so cuteeee. how about one with her fav color and her favorite milk tea? If your gf uses make up and skin care, it isn't a bad idea either. Pick simple make ups like lipsticks and such, a cute face palette maybe? Trust me, there are a lot of face palettes that are cute, bubbly and girlish color. Perfume? I'm sure there are a lot of cartoon and animations inspired perfume and make up. My sister gifted an olaf bath kit for my second sister
I like blue but pink seems like a safe cute colour you can just ask her for her favourite colour though I'm sure she won't find it too much about the present
Get couple cat necklaces? Or the couple bracelets that you can tap from miles away that send vibration to other bracelet so partner knows you thinking about them

Personally, Blue or Green. Pink, for girly girl only, unless it's rose gold(?) Yellow, it's... well the colors sorta blend in with each other. Red, it stands out too much. Black, we all know the problem with this one...
