Depends on how many people your cooking for, 3 tbls unsalted butter 2 teaspoons of lemon rind, 2 teaspoons of lemon juice, 1 teaspoon parsley for a unfancy one
And for the Ritz cracker chicken there are alot of recipes for it online, what I do differently is I place the breasts in-between Saran wrap and pound it down with a mallet before breading it, and I fry it instead of bake since I get the width down it takes less time to cook
