With the mount while the True Name is not unleashed. Hmmm the Cavalry Classes tend to have more than one Noble Phantasm... the only place where they don't is in Stay Night.

It is, literally, the true name of it. In the Fate series, names hold a lot of power. But in most legends, everything has some kind of weakness, which the enemy would learn when you unleash its true name.
Pretty much yeah~ I'll create a Servant now. Since I'm fan of the old ways, I'll have my class at random! RNG me a class!
An example can simply be Achilles, wouldn't the weakness be obvious if you know his name ? A Servant, A weapon, a mount, everything can have a True Name.
True Name is basically another name for the True nature of something. In Fate it has many meanings... For example, weaknesses that could be revealed (like with Achilles). Additionally, a Master can check the stats of his servant magically in most of the Fate Series, but when he doesn't knows their True Name, they can only see stats and class, not being able to see the Skills or Noble Phantasm(s).

Fate was based on D&D so it's easy to explain with that... of course, this only applies to the VNs and LNs of Fate When a Master has a Servant, he is allowed to know his servants class and stats even without asking. When a Master doesn't knows his servants True Name, the Servant can't use their most powerful abilities fully.
