I think it's clear enough that author wants us to understand two things: that the situation Delia is in is unpleasant and that (to date) she's been trying to make the best of a bad situation. She does have a bad personality on top of this though. What she's not had is a "better alternative" - as far as she's aware, one doesn't exist, which is why she's been trying hard in her own way. I think it's likely that Maïne will try to give Delia a better life to work towards by presenting new opportunities to her. Working in the high class restaurant would be one option since she'd be dealing with high class customers and she's already used to that.
Since Delia was introduced, that's basically what I was expecting from the Temple Master's attendants, I just wasn't sure if Delia fully understood everything she was saying.
She needs Delia for 2 reasons: 1) Because she is the only person who knows how a female noble acts 2) Her #1 threat is the temple master, if Delia is removed, Maine can't feed the temple master false information. He may also chose to take direct action on certain occasions if he feels his progress at making Maine's life miserable isn't being fulfilled. Nah, he is abusing his power to make a harem out of ignorant people. Part of the reason why he hates Maine so much is because he can't control her. He is a control freak who wants to own everything within his own domain due to his inferiority complex. Delia is her attendant, she has no reason to work in the restaurant. Her job is to attend to Maine, no one else can do that but her. That said, it is true that she can give Delia another path, and that path is money. Delia doesn't actually care about becoming a mistress, what she cares about is material stuff. She wants the material stuff that comes with being a mistress, Now think about how much money the temple head priest has, how much of that money he uses on himself and how much he uses on the mistresses, then how much money is split between multiple mistresses. Of course the mistress who has favor will get more stuff, but you would fall out of favor for the next one in 10 years if not less. Maine can give Delia WAY more money than a mistress gets. Now is Delia worth it? The answer is yes. Just like a CEO is the head of the company, Maine is the head of her workshop. The biggest income and power comes from dealing with nobles. Which means if Maine makes an "unladylike mistake", she can loose her chance to sell to the nobles. She also needs a maid to welcome the nobles.
