    I have recently watched Ancient Magus Bride and Violet Evergarden , and even though they are notnthe type of anime i usually watch, I really liked them. The visual aspect is what mainly appeals to me, but the fact they take place in Europe also helps.
    Any similar anime? Fantasy would be optimal, but it can be any genre.
    P.S. I have already watched Fate/Stay night UBW.

    While it not medieval, Lillia & Treize has that different world fantasy even tho its set arround 1930 civilization. The story itself is good

    Yes, spice and wolf is in a old european setting about a traveling merchant and his unusual company.
    But if it is about visual aspects then kyoto animation(kyoani) is way to go.
    Hyouka
    Kyoukai no Kanata
    And so on

    If you don't mind watching anime movies, do watch Kimi no na wa. This movie has great visuals, soundtrack and story.

    Emma - a victorian romance acts 1 and 2 (24 episodes total)
    Not fantasy really, but a rather amazing anime about an upstart Noble family and a maid he fell in love with. (Maid was not working in his house, was at his teachers house if I remember right)
    Was a really beautifully done anime, taking place in the late 1800s or early 1900s. No fantasy involved but I think it's in the same vein as Ancient Magus Bride.
