I've read a lot of Xianxias but I just couldn't create an image of how monster cores or 'neidans' are absorbed. Do they eat it? Do they put it near their chest? Do they put it near their 'dantians'? Or does it magically fly up and shoot a beam at the person (in order for it to be absorbed)?

The monster cores or neidans are simply a lump of condensed energy.
So the cultivator absorbs the energy slowly and the cores grow smaller.
Imagine you holding a battery, then the current discharges in you and the battery grows smaller.

This is my interpretation after reading lots of novels. I don't know if it is the correct interpretation.

Umu. The thing we call monster cores are actually really tasty dumplings. Once you eat the dumplings, you feel really really happy and your mind goes "DUMPLINGS ON EARTH, GIVE ME YOUR POWER!" Then the dumplings start sending you so much power you feel like you could launch a Super Spirit Bomb. Once you reach that point, your dantian goes "Yummm, Imma eat the Spirit Bomb Powaaa" and it consumes the power, which is the phenomenon known as a breakthrough. YAYYY <3

In Stellar Transformation, every cultivator has an internal flame that they then use to burn the neidans into energy which is then absorbed into their body in the same way they regularly absorb whatever energy. Qin Yu's way of doing so changes the neidans to PURE energy, unlike the other guys who just absorb it all and get a bit dirty energy. It's like he's getting pure iron while the others are getting iron with the slag still inside.

For ISSTH, he swallowed the cores and sucks the energy out of the core.

For Coiling Dragon, the magical beasts swallow and slowly refine cores. I dunno any other story that has neidan -> energy conversion.

Does anyone know the cores are located in their head? In humans it would be in your abdomen somewhere but why the brains for other animals...

You're trying to set rules for this when the genre doesn't have many rules attached to it. Leave it as based on the author's wishes. Some authors don't have monster cores, some with monsters make having cores rare, and some have it in spades.

There are novels where the neidan isn't exactly in the head for some beasts. Humans don't have neidan, they have dantian in their abdomen or yuanying, or nascent soul or dao pillar or whatever else. Also in CD mages have something like a dantian in their chests if I recall correctly.

It depends from novel to novel, but it's usually explained in the said novel. Pretty much just as @mmsupreme, @ccostin93 and @ArgosYesu said. Or just like a real battery and after you consume the energy it turns into powder or some useless stone.

I always imagine the cores to disappear after being used. Since the core is condensed energy, I always imagine it simply melt/ evaporate into its energy form, then it get absorbed into energy vein in body.

    Hold them in the hands
put them close to your body
    Swallow them
There are several ways to do it, depends on which novel it is.
Absorb by utilizing their cultivation manual and drawing the energy towards their body.
Result: The core will either crumble into small pieces of dust and scatter / lose color and become brittle / complete absorption which means it was just a ball of condensed energy and 100% was absorbed, including the impurities

It actually depends on the story.
Most stories treat them (as stated above) like condensed energy. Just by holding them, a cultivator can (slowly) absorb it's energy.
Since there is more energy in a core than in the surrounding air, it boosts cultivation speed.

In some stories you have to actually eat the core to absorb it's power.

Others require a special formation or require the cores to be turned into potions or pills to absorb the energy safely.

A few stories include some sort of "berserk" energy or impurities in monster cores, blocking cultivators from absorbing too many of them without going insane or damaging their meridians. Of course, the MC isn't bothered by that, given that he cultivates the something, something special technique or has the incredibly, incredibly amazing body structure.

Basically it depends on the author on how exactly cores boost cultivation.
