    1) their pronunciation
    2) their spelling
    3) number of characters in the words

Those are just a few differences. I can go on

You can be mature without being an adult, can be mature and an adult without having smut, can be an adult and have smut without being mature, can have smut without being an adult or being mature.

    Just a rough estimate but:
Adult: Has either hentai-stuff or violence or both
Smut: Written for female audience with hentai-stuff
Mature: Can contain hentai, gore, etc.

    Edit: After reading tags description

Smut is basicall word-porn, or things/stories heavily favoring the sexual kind of entertainment
Mature and adult i'm not too sure about the difference, but i'd say its that mature has bloody, negative or any other kind of things just not appropriate for children, whereas adult would most likely be the level of gramatical education, such as more complicated words, and stuff
(Yeah, there should be a more fitting word than gramatical education, but i cant think of it. Oh, the irony, so bittersweet)

    imo...
mature usually touches on adult themes (not just sexual content, but violence/gore, rape, NTR, and death) that younger audiences may not be able to handle. adult is typically strong sexual content and themes, but still has some semblance of a story (even if only barely). it may also take those things listed above to a far more fetished place. smut typically lacks any sort of plot that doesn't directly correlate to whatever theme/fetish it's pushing.

Content wise, mature novel is a novel with content of thing that heavy and deep concept like slavery, rape , gore or offensive content like religion, race or etc
Adult novel usually leaned more on novel with graphic and vivid sexual content or to put it simply the novel will described the sex scene clearlly
And smut novel is a equivalent to porn video or porn comic, the plot only revolve or end with sex

Here is the difference for the context I assume you are looking for.

    Mature
Explores mature themes in whatever work of art you are viewing. Could be Murder, betrayal, corruption, depression, suicide. Etc...
All in all mature covers things you wouldnt want your children hearing too much about.

    Adult
This generally cover sexual interactions. Something goes from mature to adult when the is a lot of sexual themes. A bit and it can stay nature but a lot or an intense sex scene can give something a adult rating.

Smut while not a rating is pretty much just an extreme focus and in depth view into sexual themes. It goes hardcore. In detail and scope... I'd give an example but I'd rather not make myself feel so dirty..

    Same as others.

Mature deals with heavy and deep concepts and plot lines. Rape, slavery, psychological issues, death, dying, so basically anything serious, and should not be taken lightly.
Hence the word “mature”, you can’t go reading a mature book and laughing about someone suffering from depression.
That’s just not cool. You have to read it seriously, and really want to understand it.

Adult is usually more along the lines of sex but in a casual sense. And kind of tackles the adult social life. Grown-Up, Independent and working, combined with the physical capabilities of an adult. As well as physilogiocal needs. Sex is something everyone does. And is something that’s a bit important to being a healthy human. So, the adult genre tackles such issues head on and doesn’t shy away. Unlike in shoujo or shounen stories with sex, where it’s vaguly implied. The adult genre tackles it head on and explores it in depth.

Smut is literally just porn. It’s just porn. Like it’s everything porn. Sometimes there’s a plot, but it’s really mainly focused on sex.
Though Adult focuses on sex too, but it tackles the issue in a broader perspective. Example, “I’m horny, but I have work to do, I’ll give my FwB a call later tonight. I need to focus on work or I won’t be able to send money home to my parents” VS SMUT, “I’m horny, but I have to work. -arrives at work- -calls in secretary- -proceeds to have sex and fuck (it’s described vividly and in all the detail)-“
And since I’m giving examples anyway.
Mature -“I’m horny, but I had sex yesterday. Am I doing it too much? .. it just feels nice. And I really need it. Do I really need sex? It makes me feel good and relaxed, but I’m honestly not feeling it that well. Do I need more stimulation? But.. what else can I do?”
As shown in the mature example, the issue of sex is tackled in a more in depth matter, and it’s treated and thought of as some kind of problem. Which does exist IRL, some people IRL have too many sexual urges and it’s quite tough.

But since these 3 genres are rather connected in that they deal with things related to sex, they are still very different in how they tackle the issue.

Mature- content tends to be darker; such as violence, rape, murder
Adult- content like rated R movies, possibility of a few sex scenes most not too in depth and foul language also may mention mature content but not described in detail
Smut - multiple graphic sex scenes

Mature is a darker shade of theme, like rape, offensive subjects like religious criticism, betrayal, or slavery. It may contain nudity but not all of Mature would be porn. They often come with Gore, Morally Grey Character, Offensive Language.

Adult is semi-porn but didn't quite commit to it yet. Like a story that occasionally has sex scenes in it.

    Smut is straight up porn.
