Probably the main reason why there are fewer female -> male genderbender stories out there is because these usually show up as crossdressing novels instead. There are tons of these so it shouldn't be hard to come across decent ones. As for the actual topic, I don't read a lot of this kind of novel, but I can recommend "农家子的古代科举生活". This book is about scholarship and the Imperial Examination system and about how a woman has to figure out how to live as a man after transmigrating. Sadly it's not translated so you'll have to read it in Chinese.
While that is likely at least partially true, the difference between a genderswap transformation or a crossdressing story tend to have fundamental differences that makes them not really suitable as substitutes for each other, unless you happen to have a separate interest in both types of stories. Not that individual stories can't overlap into both types of stories though.
I wouldn't presume to suggest that the two are substitutes for each other. However, the crossdressing mostly happens in historical novels, and these tend to have a lot of layers of storytelling. This kind of story has been part of classical Chinese literature since the Butterfly Lovers and the Ballad of Hua Mulan so they are just going to draw a lot of writers who may have gravitated towards gender transformation.
