I was about to fight you about it, but the anime really is crap, specially the latest CG seasons. It's the manga that shines immensely.
I don't like the gore or story Also, the so called tragic moments are for shock value. It is not plot driven
Everybody is entitled to their opinion. You only see the gore and shock value of Berserk, to the point of saying "it's not plot driven". There are anime that are extremely gory for the sake of shock, like Genocyber, Elfen Lied, Devilman Crybaby, Urotsukidoji, Bastard! and some others, and while I believe that Berserk has a lot more to offer than shock (at least much more than these examples), I respect your opinion.
It is all about taste. I wouldn't watch it even if I am paid. Doesn't make it bad for entertainment. Same as Game of Thrones. As many pointed out with Game of Thrones. Stories like Berserk are not as emotionally deep as they appear at first. And that's not a matter of opinion, it's a fact. If it's the first story of the type, nostalgia blinds us to see it

Death Parade Getbackers Trigun (heck some people haven't seen it) are pretty solid and I think they fall within your specifications... If you liked Black Lagoon, maybe Jormungand? What else... 86 is a good military anime. There is violence, but it isn't gory for the sake of it. Vivy: Fluorite Eyes Song is possibly the best anime of 2021. Kinda Terminator vibes.
you might like Odd Taxi? i'd post a link but I can't right now since im fresh I heard good things about Vivy, I plan on checking it out IDK if it's over yet, I don't really watch ongoing anime anymore
