My suggestions would depend on what kind of personality you want the OP MC to have. Because many novels I read have MC's who are OP but differ in how they use that power.
Morcyth Saga by Brian S. Pratt. Our MC transports from Earth and becomes a Mage in another world and completely destroys a dark religion and an empire's Magic Guild due to his unique inventions and innovative ideas. He's really the best Mage I've read in a long time... Mistborn by Brandon Sanderson. When people have the ability to ingest metals to power superhuman abilities and challenge a Hero-turned-Dark God... it becomes cool. Stormlight Archive by Brandon Sanderson. We have a kid who joins the army and becomes captain due to his charisma and OP spear techniques, only to be betrayed and made a slave. Then, after the ending of one book and the continuation of another, he gets promoted out of slave work and becomes a captain of a high Noble's guard and then a member of a... I don't wanna spoiler. Let's say his OP scenes are OP for good reason.
Dresden isn't OP by any sense of the imagination. He's a rather small fish tbh. Similarly with Kingkiller Chronicles. He's a strong mage, a pretty good swordsman, but not really OP in anything except musical talent. Codex Alera's MC doesn't become Op until about the second to last book in the series.

Hardcore OP-ness was good at first and very interesting writing, but it becomes boring fast. MC might be OP but he never finish the task he start. I think the author got so many complains about this that he decided to write a chapter to "wrap" all the incomplete tasks. What was interesting about the MC sex drive in the beginning becomes dull after a while. Like for example there was a situation where the town the MC own was attacked, representative of the town had to climb the mountain where the MC had his mansion to tell him about it and ask him for help. MC acknowledge the threat but before going, he looked at one of the girl, got horny and decided to screw her first. No sense of urgency. So the MC might be OP, but he is very dumb.
The entire trilogy? Aye. I feel Sanderson is good with ending series, but doesn't like to stick too much with the continuation and gaps between the storylines. He left the Mistborn aftermath to glimpse and legends within the current Mistborn series... I feel the best is for him to approve of fanfiction and world expansion like the Star Wars franchise did until Episode 7 destroyed all the hard work.

I believe the star wars books are situated in an alternate universe different from the movies. At least that's what it was written in one of the books description or was it in an article I read.
