I am looking for novels like Uchi no Musume where the protagonists are responsible adults raising children. I prefer novels showing the difficulties of being parents, plenty of interaction inside the family, and doses of family love

I guess you could count Hidden Marrige? Be aware that the child raising is not the only focus of the story. You still get a powerfull CEO father who is helplessly trying to control his son
Manga Amaama to Inazuma Kore wa Koi no Hanashi (more on the romance side, since it's shoujo) Barakamon Otaku no Musume (has some annoying drama) Beelzebub (but mostly shounen jump fighting stuff, still good IMO) Hinamatsuri Usagi Drop Rock n Roll Riki (primarily about boxing but his son is a large part of it too) And the obvious Yotsubato! Bolded ones that are completely translated to English.
Oh there is one anime movie like that i forget to mention... it's one of my favorite anime movie btw, and dont judge before finish watching it: Omae Umasou Da Na
