So I was reading Release That Witch and I find the MC makes seige weapons, trenches, inventory, defense formations etc. etc. like it was natural... Did the MC do a double PhD in war and if so why was it not mentioned... How does one simply think of something without any background ??? Why is this novel so famous when it has such a huge plot armour??

Weak argument. The story clearly shows he's above average. It doesn't mean anything what he said about himself. Also, both are mechanical engineers.
Wasn’t the mc an architect/engineer or something like that in his previous life? It makes sense he’d have bits of knowledge in other things that he could possibly combine to do all the things you’ve said above~

Why are you comparing a random Chinese dude to a billionaire genius inventor with a whole lifetime of experience in working with weapons and comes from a family that has been inventing weapons of mass destruction for more than a single generation?
Tony is called a genius in a world where super serum, which allowed it's user to stand up to gods, was created decades ago. A world where a man created a technology which could shrink humans to the size of an ant and as you said the MC was "above average", with hardly any explanation about his homeworld's level of technology. Just the fact that he remembers the blueprint of a steam machine, shows how unrealistic the MC is.
People are comparing him to Tony Stark, to which i'll say. Stark created something new. Roland remembered how to make something old. And any of those novels which have the MC 'knowing' how to create something like weapons, gunpowder, soap, etc. they ever only mention the things they do remember, they never mention the things they're like 'Oh, that could be so helpful. Too bad, I can't remember how to create it' about. Instead of thinking 'what bullshit reason is he trying to justify the MC knowing how to make X' think 'okay, so he knows how to make X, will he know how to make Y ?' Eg.... looms are more or less never mentioned in any novels, despite them maybe having steam, water or fossil fuel engines , and looms could be very helpful to them. Windmills or windpower is never really used either, some might already exist , some might not. Windpower just isn't always a viable option everywhere
He is engineer right, but we know little what his specialization, maybe civil engineering or mechanical engineering, but if i remember right before he reincarnated/transmigrated he is working in some kind electro machine project.
