I think it's more of an additive effect. For example: I think wolves are cool and I like girls(obviously). So a girl with wolf ears is freaking awesome! Same with cats: Cute girl with cat eary is double *meow* fun

there wouldn't really need to be that much different, the general shape within the head doesn't vary that much between mammals. the least amount of change would be shifting and lengthening the ear canal while leaving the rest of the brain unchanged. That might give sounds more of a bass-ey sound but the difference in ear would already cause some changes to how sounds sound
