Rakugan was spread to Japan during the Muromachi period, an evolution from the Chinese Yuan dynasty dessert "ruan luo gan"[1]. It is made by mixing rice flour with starch syrup and sugar, then putting it into a mold to set. The texture is similar to Chinese cloud cake. In Japan, rakugan is often used as a sacrificial offering for ceremonies.
