    Gingerbread cookie.

    Technically "gingerbread" can also be used as an adjective (not just a noun) to describe that category of foods. At least in the States.

    That's how we've always described it in Texas. People always specified cookie afterwards. Unless it's a gingerbread house. Maybe it's a regional thing?

    Was never a fan of gingerbread. Although those gingerbread houses always looked so delicious.

    I ate the decorations of some of them. I was just not a fan of gingerbread in general.

    To be more specific, think of it like an orange and ginger trifle.
    Although, I think that uses ginger loaf, rather than gingerbread.

    Here, gingerbread is more than one type of good. It can be something like a cake/bread or a cookie/biscuit. I was referring to the cookie, but I probably should've been more specific. I suppose the cake version is ginger loaf to you, and gingerbread is the cookie, right?

    Gingerbread is a biscuit, not a cookie.
    But Americans call cookies and biscuits cookies, so it's a cultural thing.
    Ginger loaf is a cake.
    We also have ginger pudding, which is a vanilla sponge with stem ginger in, covered with a ginger sauce on top.
