I don't think that love is obrigatory when the we talk about full NTR. I think that the feeling of "possession" is enough.
Love and Possession are not completely separated.
If you love, you will be possessive. But you can love without being possessive
and you can be possessive without love.
And Endou is a prideful jerk. He really doesn't care about Yukino, he just wants to eat her. But though he does not love her, he's completely possessive and incredibly prideful, thus, being NTR'd can hurt him as much as if he really loved her.

When I think about NTR, I think that the feeling of sadness, shame, rage, jealousy are what really matters! So, even if the love is one sided and they aren't in a serious relationship, as long the mc loves or is possessive towards a girl, I think that it's enough to call it NTR
