I don't think another archon/god will appear after the current 7, but one of them is already trying to expand influence and claim territory. That's kinda what the Fatui are all about
After thinking about it, I actually believe the opposite would happen. It seems to me the story is leaning towards an ending where there will be no gods ruling Teyvat. This is based on the current Archons' actions we encounter. Spoiler: Archon Stories First is Barbatos. From the start we know he doesn't like ruling over the people of Mondstadt and apart from supporting people from the background or whenever there's a need, he prefers just living as bard. In the end of the prologue, he was attacked by Signora and had his Gnosis stolen. We could argue whether or not he could have fought Signora and won but in the end, his gnosis was stolen yet he wasn't that worried or concerned about it. Second is Morax who as we all know planned his own retirement and gave away his own gnosis. At this time, the adepti also backed off from actively interfering on Liyue and decided to let the humans rule. Third is Beelzebul who before we even arrived in Inuzama, already discarded her gnosis and gave it to Yae who gave it to Scaramouche like it's nothing. And from what we know of the Tsarista, her agenda involves gnosis. And from what we know of a gnosis - it servers as a direct connection to Celestia
