Poison Genius Consort. It is a 'historic rebirth novel' and the FL/MC has a space/medical/poisons expert cheat...but the character development is really good.

Hidden Marriage is set in modern times and is also really good believable characters as well.

Realistic? Well let’s say Weed’s “money grubbing nature” is quite realistic? Like that?

It's been a while, but I remember vaguely that she did at the beginning.....I always thought at first, she needed to secure her own safety...then she just got pulled into The Court intrigue and her romance with Ice Cube....etc. She has always been fascinated by poisons and ancient poisons and she has her medic system....Why would she want to leave?

There is no such thing as realistic character. All characters are figments of imagination. If you want realistic character then you need to go to biography or autobiography section.
But if you are asking for characters who often do things that are doable in real life then you may find them.

Hmm...not necessarily. If you have nothing to go back to, or your new life is better than the last, you may think differently. Imagine if in your previous life you were dying or ill? Or were very poor? Or were ugly? Etc. You might willingly transmigrate after the fact. Just some food for thought cause everyone's circumstances and reactions are different.

She's a happy woman in love. She's attached to her new life. There's no need to return to a place which you tired of, I assume.

Not sure which of "realistic" aspects you wished for but here some of my recommendations.
The Iron Teeth: A Goblin's Tale - Serious (kind of) where characters think realistically world is well built. Its fantasy story but with a lot of realistic approaches
Law of Shadows - Modern world, earth, supernatural. Not sure how realistic it is but it's not over the top or flashy

Takarakuji de 40-oku Atattandakedo Isekai ni Ijuu ... - Modern day, Protagonist wins the lottery and moves into countryside to avoid everyone who is after his money, well and he finds door to another world (not really realistic :D ) but other than that it was about him helping a village with his money getting them introduces to some basic technology and so on. I read 40 chapters there was no magic or something like that so far.
Release that Witch - a lot of unrealistic stuff but he tries to use modern knowledge (which for some reason he has too much of) to fight against supernatural powers, MC is powerless otherwise.
Mother of Learning - One of the best novels on the web, its world is well built character reactions is realistic and believable. Thought it is supernatural with magic etc.

LOL, modern time thinking would only be applicable in modern setting, so I'll recommend CCG for that unless you want some reaction of an ancient thinking against modern thinking which is Sevens

for honorable philosophy vs modern idealism, it would be Legend of the Galactic Heroes, there's an ongoing anime right now, you should check it out before reading the novel, as far as I know, it's an accurate adaptation
